This recipe was a guess, but turned out SO GOOD! Last weekend I had to play piano for a Women's Conference and I also had family come into town for the weekend. I needed a meal I could throw in the crockpot so it would be ready for my family and guests while I was not home. I used what I had on hand to make this. They all raved about it when I came home that night. Now it's a keeper recipe!
Slow Cooked Shredded Beef Tacos
1 Chuck roast (3 lbs. or so)
1 Can Rotel tomatoes
1 Taco seasoning packet
1 Cup beef broth
This couldn't be easier. Throw it all in the slow cooker and let it go! I put the roast in first and just dumped everything on top.
Cook 6 - 8 hours on low.
Shred beef and serve with tortillas, cheese, salsa, and whatever taco topping your family likes!
