BBQ Chicken Sliders

Do you ever get in a cooking slump? I'm there - deep in the throes of a big slump. We have the intense summer heat still going on and I have lost all desire to cook. Thankfully my oldest son Travis had a new recipe he wanted to try out yesterday. And let me tell you - it was a HIT! I'm totally thinking this would be a super easy evening dinner when the back to school schedules get crazy again!

BBQ CHICKEN SLIDERS

INGREDIENTS

Rotisserie Chicken - shredded
BBQ Sauce
Red Onion - sliced
Pepper Jack Cheese - we used the pre-sliced cheese of course!
Fresh Parsley - chopped
Dinner Rolls - we used the package of 12 Hawaiian dinner rolls
Melted Butter

DIRECTIONS

Place the bottom halves of the dinner rolls in a 9x13 pan.
Shred the rotisserie chicken and place chicken on top of open dinner rolls.
Drizzle on BBQ sauce and place sliced pepper jack cheese on top.
Garnish with sliced red onion and chopped parsley and if desired add another layer of cheese and BBQ sauce. Place the bun tops on.
Brush tops of dinner rolls with butter.
Bake at 350 for about 15-20 minutes until cheese is melted.

ENJOY!

  1. I made these last night! They were very easy and delicious! Thank you so much for this post. I did change one thing, I first cooked the chicken in the crockpot with BBQ sauce. They came out great, and everyone loved them.
