Coconut Curry Chicken Soup

Coconut Curry Chicken Soup

2 teaspoons olive oil
2 teaspoons sesame oil
1/2 onion, chopped
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 tablespoon turmeric
1teaspoon salt
1 tablespoon sweetener
(I use monk fruit but any sweetener is fine)
2 cans of coconut milk
3 cups chicken broth
1+ tablespoon red curry paste
soy sauce - a few shakes
carrot, grated
chicken, cooked 
(I love the Trader Joe's frozen grilled chicken strips)
cilantro, for garnish

Saute garlic, onion, and ginger in oil
Add turmeric, salt, sweetener, coconut milk, broth, curry paste, and soy sauce. 
Simmer for a few minutes, then add the grated carrot and chicken. 
Bring to a boil and simmer until the carrot is tender.
Garnish with cilantro.
