Menu Plan & Shopping List February 6

I scored last night at King Soopers. I made a quick run to the grocery store to get a few necessities & went down the meat aisles. They had just put a bunch of their chicken on manager's special. I was able to spend $13 & get all the meat we'll need for the week, maybe part of next. I'm also excited because the chicken was bone-in so I will be making some broth and shredding quite a bit of the meat to freeze. What that means, though, is I've planned my week's meals around what I got on sale. So it will be a week of mostly chicken.  I also don't have a lot to spend on groceries this week.  So I picked meals that I already have quite a bit of the ingredients already.


Here's what we are eating this week. As always, shopping list is included at the end of this post.

Monday: Southern Corn Chowder

Wednesday: Enchilada Lasagna








Thursday: Jambalaya - I'm using our standard go-to for jambalaya.  I got chicken sausage for $1.99 so i'll try using that instead of beef sausage.

Friday: Frozen Lasagna & Homemade Artisan Bread (have you tried Artisan Bread in 5 Minutes a Day? I got it from the library and the bread is AMAZING)

Saturday: Sausage & Potato Soup

Sunday: Leftover for lunch, pancakes & eggs for dinner

3 cans Cream of Chicken Soup
Chicken Broth
1 can Cream of Celery
Green Chilis
Ranch Dressing mix
Rice

Paremesan
Mexi Cheese
Cheddar Cheese
Frozen Vegetables
Frozen Lasagna
2 pkg. Frozen Creamed Corn
