Grilled Thai Chicken :: 31 Days of Healthy Freezer Meals


I shared this recipe earlier this summer but it is a GREAT freezer option as well! I love freezer meals that aren't all slow cooker recipes. Don't get me wrong - I love using my slow cooker. A lot of the recipes this month will use it. Just don't get in our mind freezer meals much be dumped in the crockpot. This one we will grill!


You actually have a few options - I've done them both.

1. Make these as skewers and then simply freeze the skewers.
2. Use whole chicken breasts or chicken tenderloins and grill them that way.
3. Use chicken wings and bake or use slow cooker for perfect football food!

GRILLED THAI CHICKEN  
Chicken Breasts (We like to cut and skewer but you can use chicken tenders or chicken breasts.)
Olive Oil
Salt
Black Pepper
Thai Honey & Spice Sauce *recipe below

Drizzle chicken with oil and season with salt and pepper.

THAI HONEY & SPICE SAUCE

1/2 Honey
Zest of 2 Limes
2 T. Soy Sauce
1 T. Chopped Cilantro
1 tsp. Salt
1 T. Worcestershire Sauce
Juice of 1 lime (about 2 T.)
2 Garlic Cloves
2 T. Red Pepper Flakes
1 tsp. Black Pepper

Place the sauce ingredients in a freezer bag and mix well. Throw in your chicken, whether it's skewers or whole chicken breasts or tenders.

That's it!  Freeze, thaw when ready, and throw on the grill!
