31 Days of Healthy Freezer Meals :: Turkey Meatloaf



WELCOME to the Write 31 Day Challenge! I took the plunge, took the challenge. It may take me to the brink of insanity but I really want to succeed. Can I do it? Can I reach the end of October and have written a total of 31 posts? I'm going to give it my best go! My topic for the month of October will be 31 Days of Healthy Freezer Meals!

Planning ahead and freezing meals ahead is pretty much a must for me. The days hurry by so fast with work, housework, doctor appointments, therapy appointments, karate, meetings, etc.

My problem with typical freezer meals is I don't want to just throw together a dish filled with cream soup mixes and sugary marinades. Over the past few years, our family has come a long way with how and what we eat. I don't want to compromise that even though my time for cooking requires much freezing and planning ahead.

Let's get cooking!

Recipe #1 is my kids' FAVORITE meal - Turkey Meatloaf. I'm not exaggerating when I say my kids cheer when they hear I'm making this and that they fight over the leftovers for an after school snack.

This recipe is simple to make the evening of, but even better when I've made them ahead and just have to thaw! To make this family favorite into a freezer meal I make it like normal and then put it in metal disposable loaf pans and freezer bags.  I remove them from the freezer the morning we plan to eat them and that's it! They're ready to bake by dinner time. SO EASY!

Double or triple the batch and you'll have several nights worth of meatloaf ready and waiting!

So without further ado...




HEALTHY TURKEY MEATLOAF
Yield: 2 Meatloaf Pans

Ingredients:

4 egg whites
1 C. quick oats
4 T. worcestershire sauce
1 tsp. garlic powder
4 T. ketchup
1/2 tsp. salt
1/2 tsp. black pepper
2 lb. ground turkey

Directions:

Mix all ingredients except the turkey together. Once combined, mix in the turkey.

To freeze ahead, divide up the mixture between 2 greased disposable loaf pans and insert loaf pans into large freezer bags.

Take frozen meatloaf out of the freezer in the morning and let thaw.
Bake at 350 degrees for approximately 30 minutes.

    1. Hope you love it! My kids seriously bed for it. I was never a meatloaf person before this recipe.
