Hello Monday! I'm not quite sure I'm ready for the week to start yet. That weekend went WAY TOO FAST. But alas, it's here - and its' my birthday week! I'm trying to use what I have on hand, so lots of chicken recipes this week because it's what I have in the freezer!
Here are 5 healthy and simple recipes I’m cooking this week. When meal planning, my goal is always healthy but also quick and easy. I don’t have time to make elaborate dinners. Those days are long gone!
1. Bruschetta Chicken (I have our family recipe coming in a post later this week but until then, we do love this Six Sister's version.)
2. Salisbury Steak (We love the Trim Healthy Mama recipe from their cookbook. It's insanely good + healthy!)
4. Pizza-dillas (Kid-food night)
*Every Thursday night is what we call "Kid Food Night" at our house. This recipe from Mix and Match Mama was a HUGE hit and we'll be making it again this week!
Snacks: Apples & natural nut butter, Hard boiled eggs, Greek yogurt with frozen berries
